Fruits of the Forest Yoghurt Compote
Take advantage of delicious strawberries when in season and try them in this super simple breakfast option!
To Prep: 5 minutes
To Cook: 5 minutes
1 cup frozen mixed berries
250g fresh strawberries
1.5 cups vanilla or berry low-fat yoghurt
3 tablespoons toasted almonds (flaked)
- Place mixed berries (fresh blueberries can be substituted) into a small saucepan and cook over medium heat, gently stirring until berries soften, approximately 3 to 4 minutes.
Remove from heat and stir through hulled and sliced strawberries. Allow to cool for at least 5 minutes, longer if time permits.
- Divide half the berry mixture between glasses. Top with layers of yoghurt, remaining berries then yoghurt. Sprinkle almonds on top and serve.
